What is the maximum privatisation capacity at Chez Clément?

The total capacity of Brasserie Chez Clément is one of the largest in Walloon Brabant for a traditional Belgian brasserie: 230 guests seated in regular dining configuration, up to 250 guests in a standing cocktail configuration. That scale is rooted in the history of the building itself: opened in 1858 by Henri and Sidonie Clément as the “Bruyère à la Croix” coaching inn on the Brussels-Wavre road, the venue has always been designed to absorb significant volumes.

Under partial privatisation, several configurations are possible. The conservatory, the emblematic glass room where Marie and Gilles Verleyen, the fifth generation now at the helm, were married, can be privatised for a small to medium intimate format. A portion of the main dining room can be isolated for a wider group. Total privatisation of the restaurant remains available for the largest events.

In event configuration, the venue can host up to 250 guests, consistent with the overall capacity of the restaurant. The conservatory alone seats up to 150 guests; the main dining room covers the rest of the capacity. The walking-dinner / standing cocktail format is not offered in the conservatory: that space is conceived for seated dinners, not stand-up receptions.

Chef Vincent Frédéric De Laloy's brigade (thirty-two people in the kitchen, in the house since 1996) is dimensioned for that volume: on a classic service, the brasserie already serves 200 to 300 covers, well over 1,400 covers weekly.
