Is Brasserie Chez Clément really open seven days a week, all year round?

The seven-day promise is one of the defining commitments of Chez Clément. Lunch from 12:00 to 14:30 and dinner from 19:00 to 22:30 are served Monday through Sunday, every week of the year. The bar opens continuously from noon until 1 a.m., also every day. This is unusual in Belgian hospitality, where Mondays are traditionally a closing day; Chez Clément maintains the seven-day rhythm year-round.

How the brasserie sustains that pace is itself part of the story. The kitchen runs with a brigade of thirty-two, under chef Vincent Frédéric De Laloy since 1996, generating between 200 and 300 covers per service and between 2,800 and 4,200 covers per week. Continuity of staff is one of the foundations: the kitchen porter alone has been at the brasserie for twenty years, a remarkable tenure that says a great deal about how the team is built. The Clément family thread, from Henri and Sidonie in 1858 through to Marie and Gilles Verleyen since 2021, has always favoured continuity over churn.

The year-end calendar is the one stretch where the brasserie steps out of its seven-day rhythm, and the rule is precise: Chez Clément is closed on Christmas Eve evening (24 December), all day on Christmas Day (25 December), New Year's Eve evening (31 December), and all day on New Year's Day (1 January). These four moments are the only annual closures, there is no other planned closure of the year, no summer break, no refurbishment shutdown.

For all other public holidays in the Belgian calendar, Easter Monday, Labour Day on 1 May, Ascension, Pentecost, National Day on 21 July, Assumption on 15 August, All Saints on 1 November, Armistice on 11 November, Chez Clément remains open. Lunch services on these days are often busier than usual, as families take advantage of the day off, so booking ahead is wise.
